Cyndara's Sweet Potato Flan
(Vegan)
Cyndara learned this recipe when she was a young student at the Bardic Temple while in training. Though born a princess, she, like every student there, was required to learn to cook, and is actually quite an accomplished chef. She serves this wonderful dessert with freshly picked strawberries and a whipped coconut cream topping.
Ingredients
2 lbs organic sweet potatoes (cooked and peeled)
1 can non-dairy soy or coconut sweetened condensed milk
3 tsp egg substitute (pre-mixed with 2 tbsp water)
1 tbsp cinnamon (or to taste)
1 tsp allspice
Directions
Puree the sweet potatoes and place in mixing bowl. Blend in the rest
of the ingredients, starting with the sweetened condensed soy milk.
Place the mixture in a lightly greased cooking dish. Bake at 350° F for 20 to
30 minutes - until knife blade is removed clean.
Serve hot or cold with soy or coconut whipped cream topping or non-dairy ice
cream and organic strawberries, raspberries, or blueberries.
(Note: Cyndara makes her own non-dairy sweetened condensed coconut milk, but it's faster for humans to buy it ready-made.)
