Day Three of the Winter Solstice…

Teren, Tara, and I went ice-skating yesterday on Lake Maxine. It was so gorgeous out—everything glistened with a crystalline glow. Tara was amazing on the ice, like a magical ballerina in motion. I had no idea she could be so graceful. Teren is also turning into quite a good skater. He and some other boys raced around the lake. Unfortunately, I think they let him win—being a prince and all. I wish they wouldn't do that, but you know how villagers are. He’s not so lucky with the boys at the castle.

I, of course, was also quite amazing. It’s been a couple weeks since I deployed the Frost, and my radiance has completely returned. As I skated, the ice lit up with a prism of colors. Everyone stopped to watch—that is until a young buck ventured onto the ice and slipped and broke his leg. We transported him off, and Tara healed him, so he’s fine. I don’t think he’ll try that again.

With so much to do, I haven’t had time to write up my beauty secrets. But I will. In the meantime, I was able to get the recipe for Winter Pudding from the little eatery when we had dinner with Grandmam and Granddad two nights ago. Thought I’d share that with you. It’s so yummy—especially on a cold evening.

Our Winter Solstice Party is tomorrow, so we’re headed back to the Castle. Mother went back last night. She worries too much about every little detail. I mean, that's what we have an entire staff to take care of. Guess she’ll never change. Must be a sister thing. Selena is the same way.

The party is going to be a Winter Wonderland themed ball. My gown is amazing. Margay outdid herself finding the dressmaker. The fabric is spun with crystal snowflakes.

Jake will, of course, be there, and I know he won’t be able to take his eyes off me. I shouldn't admit this—I am after all Queen—but I really do miss him. Nobody has that smile. And his beautiful green eyes. They light up when he laughs—or sees me.

Winter Orange Pudding

Pudding Mixture
2 Apples – unpeeled and cored
1/2 cup raisins
1/3 cup organic brown sugar (packed)
2 cups flour
1 teaspoon allspice
1/4 teaspoon salt
1/2 cup organic milk (or almond milk)
2 tablespoons coconut butter
1 cup wild blueberries or other fruit. (Note: Blueberries grow all year round in Calabiyau.)

Sauce:
1 cup organic brown sugar (packed)
1 3/4 cups water (brought to a boil) 
1 cup organic brown sugar (packed)
2 teaspoons organic vanilla
1 tablespoon grated organic orange rind
1 tablespoon flour
1 tablespoon coconut butter (softened)

Directions:
Slice one apple into thin slices and set to the side. Chop the remaining apple.
Combine flour, baking soda, brown sugar, allspice, salt, and raisons in a mixing bowl.
Add the chopped apple pieces to the flour mixture. Then add milk and melted coconut butter.
Place the mixture in a lightly buttered square cake pan. Decorate with the apple slices on top.
Prepare sauce by mixing all of the remaining the ingredients except the blueberries together. Lightly pour sauce over the pudding mixture. 
Bake at 350-degree oven for approx. 30 to 40 minutes or until a knife can be inserted and removed clean.

Serve warm with fresh blueberries.
